This cheesecake has a very smooth and silky texture to it. The cheesecake itself is the basic one and you can add various flavours to it to make a variety of cheesecakes. Fruits especially berries
go really well with it. Oranges also taste good with it.It needs to be served chilled. Make sure that the ricotta and cream cheese that you use is plain, unflavoured and unsalted.

Ingredients:
Base:
3/8cup  flour(maida)
1/6cup  ground almonds(almond flour)
1/8cup  powdered sugar
25g      cold unsalted butter
Cheesecake Filling:
120g     ricotta (plain, unflavoured, unsalted)
295g     cream cheese (plain, unflavoured, unsalted)
2/3cups  powdered sugar
2            eggs
1/8cup   lemon juice
1/2thsp  lemon rind, ground to make a smooth paste(do not use water)
1/2tsp   vanilla essence(extract)
3/4cup  water
3/4tbsp cornflour
Garnishing:
Blueberry Pie Filling
Oranges
Any other fresh fruits and berries of your choice


Method:

Preheat your oven to 180C

Base:
1)  Place the flour, ground almonds,sugar in a large bowl. Chop the cold butter into pieces and add it to the dry ingredients(flour, ground almonds and sugar). Rub it with your hands till the mixture gets a breadcrumb like texture
2)  Line a 18cm round cake tin(preferably a springform pan) with butter paper on the base. Put the mixture in it and press it with your hands or a spoon so that it covers the entire base of the pan. Level it out.
3) Place the tin in the oven for 15-20 mins or till light golden brown.
4) Once done,remove it from the oven and keep aside.

Cheesecake filling:
1) Place the ricotta, cream cheese, sugar,eggs, lemon juice, lemon rind, vanilla in a food processor. Process till combined.
2) Mix the cornflour in the water. Ensure that there are no lumps.
3) Start on the processor on low and add the cornflour-water mix slowly while letting it process. Mix for some time(1 min) till combined. The mixture should now be a bit thick(not very runny).
4) Grease the sides of the cake tin with a little butter and pour the mixture into the pan. Give it a little tap to remove any air bubbles. Smoothen the the mixture with the help of a spoon or spatula. Place it in the oven for 1 hour. If the cheesecake starts to become brown on the surface, then reduce the temperature to 150C.
5) After 1 hour, let the cake stay in the oven for 1 more hour with the door closed.
6) Remove and put it in the fridge for 3 hours or till cold.
7) Before serving, add a thin layer of the blueberry filling on the cake and serve with oranges or other fruits.
    Serve chilled.
