Hey everyone!!! This is the red velvet cupcake recipe I had promised to post. You can also use this recipe for making a red velvet cake. The recipe is very simple. It makes very light, fluffy and soft cupcakes. Here it is:

Ingredients :

  • Unsalted Butter at room temperature: 3/4 cup
  • Powdered Sugar                                    : 2-1/4 cups
  • Vanilla Essence                                      :1-1/2 tsp
  • Eggs                                                         : 3
  • Red food coloring                                   : As required to get the desired shade.                                   
  • All-purpose Flour / Maida                      : 3 cups
  • Cocoa Powder                                        : 2 tsp
  • Salt                                                            : 3/4 tsp
  • Buttermilk                                                 : 1-1/2 cups
  • Baking Soda                                            : 1-1/2 tsp
  • Vinegar                                                      :1-1/2 tsp
  • Heart shaped Chocolate Cookies
  • Powdered sugar
Method:

  1.  Line your cupcake pans with paper cups and set aside.
  2.  In a large bowl, beat the butter until soft and creamy. Add the sugar and the vanilla essence and beat.Add the eggs, one at a time beating well after each addition. Stir in the red food coloring little by little till you get the desired shade.
  3. In another bowl. sift the flour, cocoa powder and salt.
  4. Add the flour mixture and the buttermilk alternatively to the butter and sugar mixture and beat well between each addition.
  5. In a small bowl stir together the baking soda and vinegar and immediately add to the cake batter and stir well.
  6. Fill the cupcake pans with the batter about 3/4 way full.
  7. Put the cupcakes in a 200 C oven for about 15-20 minutes or till a toothpick inserted in the cupcake comes out clean.
