Hey everyone!!! This is the red velvet cupcake recipe I had promised to post. You can also use this recipe for making a red velvet cake. The recipe is very simple. It makes very light, fluffy and soft cupcakes. Here it is:
Ingredients :
- Unsalted Butter at room temperature: 3/4 cup
- Powdered Sugar : 2-1/4 cups
- Vanilla Essence :1-1/2 tsp
- Eggs : 3
- Red food coloring : As required to get the desired shade.
- All-purpose Flour / Maida : 3 cups
- Cocoa Powder : 2 tsp
- Salt : 3/4 tsp
- Buttermilk : 1-1/2 cups
- Baking Soda : 1-1/2 tsp
- Vinegar :1-1/2 tsp
- Heart shaped Chocolate Cookies
- Powdered sugar
- Line your cupcake pans with paper cups and set aside.
- In a large bowl, beat the butter until soft and creamy. Add the sugar and the vanilla essence and beat.Add the eggs, one at a time beating well after each addition. Stir in the red food coloring little by little till you get the desired shade.
- In another bowl. sift the flour, cocoa powder and salt.
- Add the flour mixture and the buttermilk alternatively to the butter and sugar mixture and beat well between each addition.
- In a small bowl stir together the baking soda and vinegar and immediately add to the cake batter and stir well.
- Fill the cupcake pans with the batter about 3/4 way full.
- Put the cupcakes in a 200 C oven for about 15-20 minutes or till a toothpick inserted in the cupcake comes out clean.
