I have been making these lovely banana cupcakes for many years now and they always turn out very good. This is a recipe of Tarla Dalal. Infact, these are the only eggless cakes of mine which turn out good. I do not add walnuts generally, but if you like walnuts, then be my guest. In the following recipe, you can add 1/4 th cup of chopped walnuts in the recipe below to make Banana Walnut muffins.



Ingredients:
  •   Butter, softened         : 1/2 cup
  • Castor Sugar               : 1/2 cup
  • 1 Ripe Medium Banana
  • Vanilla Essence          : 1/2 tsp
  • All Purpose Flour        : 3/4 cup   (You can use Aata too)
  • Soda-Bi-Carb              : 1/4 tsp
  • Baking Powder            : 1/4 tsp
  • Salt                                : 1/4 tsp
  • Milk as required.
Method:
  1. Sift together the flour with the soda, baking powder and salt. Keep aside.
  2. Put the butter in a mixing bowl and whip till soft and creamy.
  3. Add the caster sugar and mix.
  4. Peel and mash the banana and add to the butter and sugar mixture and mix thoroughly.
  5. Add the vanilla essence, walnuts, and stir. Then add the sifted flour and mix gently.
  6. Add milk little by little till you get a smooth but slightly thick batter. (Dropping Consistency)
  7. Fill in each of the cup cake cups almost till the top and bake them in the oven at 220 C in the oven till done (a tester will come out clean from the muffins).
              If you want top it with some vanilla or chocolate buttercream. I prefer vanilla buttercream more, but chocolate buttercream tastes good too !!!!!
