I have been making these lovely banana cupcakes for many years now and they always turn out very good. This is a recipe of Tarla Dalal. Infact, these are the only eggless cakes of mine which turn out good. I do not add walnuts generally, but if you like walnuts, then be my guest. In the following recipe, you can add 1/4 th cup of chopped walnuts in the recipe below to make Banana Walnut muffins.
Ingredients:
- Butter, softened : 1/2 cup
- Castor Sugar : 1/2 cup
- 1 Ripe Medium Banana
- Vanilla Essence : 1/2 tsp
- All Purpose Flour : 3/4 cup (You can use Aata too)
- Soda-Bi-Carb : 1/4 tsp
- Baking Powder : 1/4 tsp
- Salt : 1/4 tsp
- Milk as required.
- Sift together the flour with the soda, baking powder and salt. Keep aside.
- Put the butter in a mixing bowl and whip till soft and creamy.
- Add the caster sugar and mix.
- Peel and mash the banana and add to the butter and sugar mixture and mix thoroughly.
- Add the vanilla essence, walnuts, and stir. Then add the sifted flour and mix gently.
- Add milk little by little till you get a smooth but slightly thick batter. (Dropping Consistency)
- Fill in each of the cup cake cups almost till the top and bake them in the oven at 220 C in the oven till done (a tester will come out clean from the muffins).
